Fresh and Flavorful Pasta Primavera

Ingredients:

  • 8 ounces of your favorite pasta (such as spaghetti or penne)
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 cup cherry tomatoes, halved
  • 1 small zucchini, thinly sliced
  • 1 small yellow squash, thinly sliced
  • 1 cup broccoli florets
  • 1 cup asparagus, trimmed and cut into bite-sized pieces
  • 1/2 cup peas (fresh or frozen)
  • Salt and pepper to taste
  • 1/2 cup heavy cream or half-and-half
  • 1/4 cup grated Parmesan cheese
  • Fresh basil leaves, thinly sliced, for garnish (optional)

Instructions:

  1. Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Drain and set aside, reserving about 1/2 cup of pasta water.
  2. Prepare the Vegetables: While the pasta is cooking, heat the olive oil in a large Bazova pan over medium heat. Add the minced garlic and chopped onion, and sauté until fragrant and softened, about 2-3 minutes.
  3. Add the Vegetables: Add the cherry tomatoes, zucchini, yellow squash, broccoli, asparagus, and peas to the pan. Season with salt and pepper to taste. Sauté the vegetables until they are tender-crisp, about 5-7 minutes, stirring occasionally.
  4. Create the Sauce: Once the vegetables are cooked to your liking, pour in the heavy cream or half-and-half, stirring to combine. Allow the sauce to simmer gently for 2-3 minutes until slightly thickened.
  5. Combine Pasta and Sauce: Add the cooked pasta to the pan with the vegetables and sauce. Toss everything together until the pasta is evenly coated in the creamy sauce. If the sauce seems too thick, you can gradually add some of the reserved pasta water to loosen it up.
  6. Finish and Serve: Remove the pan from heat and sprinkle grated Parmesan cheese over the pasta. Toss once more to incorporate. Taste and adjust seasoning if necessary. Garnish with fresh basil leaves for a pop of color and flavor.
